By callsigns I assume you mean the custom titles - they are added by mods. They're kind of like a pilots callsign - you don't get to pick yours, once the community has come up with one for you based on funny experiences on the field or stuff like that, it'll get set for you.

Your "callsign" is your username, "dirtydozen". The "ASC Callsign" field is simply to provide more information if you have a different call sign on Airsoft Canada. Edit: Yes, usually a call sign is changed once you earn a more entertaining one at a game.
